Ingredients:

  • 595 g of fish paste
  • 2 tablespoons of tapioca flour
  • 1 egg
  • 100 ml of coconut milk
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 2 stalks of lemongrass, sliced
  • 2 kaffir lime leaves, torn
  • 10 pieces of banana leaves, optional

Instructions:

First things first, we have to mix all the ingredients together until they're well combined. It shouldn't take too long, but be sure to mix it thoroughly so that everything is evenly distributed. Once that's done, it's time to move on to the next step.

Next, we need to prepare the banana leaves. If you have them, that's great, but they're not a necessity. If you don't have banana leaves, don't worry, you can just use a baking dish. Oil the banana leaves and place the fish paste mixture onto them, then wrap them up tightly. If using a baking dish, spread the paste evenly into the dish and smooth the surface.

Now, it's time to steam the Otak Otak. If you're using banana leaves, steam them for about 25 minutes, and if you're using a baking dish, steam for about 30 minutes. Make sure to keep an eye on them as they cook, and take them out once they're firm to the touch.
