Ingredients

  • 500g boneless chicken breast, cut into bite-sized pieces
  • 1 green bell pepper, cut into cubes
  • 1 red bell pepper, cut into cubes
  • 1 onion, cut into cubes
  • 1 pineapple, cut into cubes
  • 2 tbsp cornstarch
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup brown sugar
  • 1 tbsp sesame oil
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • 1/2 cup flour
  • 1/2 cup water
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a small bowl, mix together soy sauce, vinegar, brown sugar, sesame oil, ginger, and garlic. Set aside.
  2. In a separate bowl, mix flour, cornstarch, salt and black pepper. Coat each chicken piece in the flour mixture.
  3. Heat oil in a pan and fry chicken until golden brown. Set aside on a paper towel to drain any excess oil.
  4. In the same pan, sauté onion, green and red bell peppers until softened.
  5. Pour in the sauce mixture and allow it to boil. Add cooked chicken and pineapple cubes. Stir until all ingredients are coated with sauce.
  6. Serve hot with steamed rice.
