  5. Reduce to a simmer and add the kaffir lime leaves, lemongrass stalks, turmeric leaves and tamarind juice.
  6. Add salt and sugar to taste.
  7. Cover and let it simmer for at least 3 hours, stirring occasionally.
  8. Add the kerisik and continue to cook, uncovered, until the sauce thickens and coats the beef.
  9. Remove from heat, let it cool and serve with some hot steamed rice.
